Wet the rim of an Irish coffee glass and roll it in caster sugar.
Add the overproof rum and triple sec, then carefully ignite the surface and swirl the glass so the flame caramelises the sugar rim.
Extinguish the flame by pouring in the coffee liqueur.
Top with hot coffee and stir once.
Float lightly whipped cream over the back of a bar spoon and grate nutmeg over the top.
Made famous by Huber's in Portland, Oregon, where they have poured it tableside since the 1970s and go through a startling quantity of 151. Ignite it away from the bottle and away from your face; overproof rum vapour catches faster than most people expect.
