Put the mint leaves in a collins glass and press them gently against the sides with a bar spoon — do not shred them.
Add the lime juice and demerara syrup, then pack the glass two-thirds with crushed ice.
Add the aged rum and swizzle with a bar spoon until the glass frosts.
Top with more crushed ice to form a dome.
Float four dashes of Angostura bitters over the surface and garnish with a mint sprig.
