Från bartendern

Recorded by Jacques Straub in 1914 and by Hugo Ensslin in 1917. Equal parts is the historic build, but a 2:1 rum-forward version suits modern aged rums better. This is the drink to make when someone says they do not like rum.

Corn 'n' Oil
Lime (quarter wedge, muddled)

Corn 'n' Oil

Rich and molasses-forward with deep caramelized sugar and dark treacle from the blackstrap float, lifted by sharp lime and the warming spice, almond, and clove perfume of falernum. Angostura bitters weave in aromatic complexity while the aged rum adds a smooth oak backbone, finishing long, bittersweet, and slightly viscous.

Saratoga
Cognac

Saratoga

Grape and grain arguing productively — cognac bringing dried fruit and florality, rye bringing pepper, vermouth holding the middle with bitter herbs and vanilla.

Liberal
Rye Whiskey

Liberal

Bitter orange and gentian threading through the rye and vermouth, drier and more savoury than a Manhattan and considerably longer on the finish.

Emerald
Irish Whiskey

Emerald

Green apple and light grain where a rye Manhattan would give you pepper, the vermouth's bitterness much more exposed with no spice to hide behind.
