Chill a coupe glass.
Combine the aquavit, Cynar and fino sherry in a mixing glass.
Add two dashes of peach bitters.
Add ice and stir for 25 seconds until well chilled.
Strain into the chilled coupe and express a lemon twist over the surface.
Created by Robert Hess in 2002 as a deliberate Negroni analogue using three entirely different bottles. It is the best argument in existence for keeping a bottle of aquavit behind the bar, and it works particularly well before a meal of cured fish.
