Från bartendern

Created by Phil Ward at Death & Co in New York in 2007 and now on menus everywhere. Ward's insight was that agave spirits do the same job as aged whiskey in an Old Fashioned — the mezcal is a seasoning, not the base, so keep it at a quarter.

M & M
Amaro Montenegro

M & M

Smoky and spirit-forward with waves of bitter orange, caramel, and dried herbs from the Montenegro balanced against the earthy, charred depth of mezcal. Rich and warming on the finish with a bittersweet complexity that lingers beautifully.

Bacon Fat-Washed Bourbon

Benton's Old Fashioned

Smoke and cured pork sitting behind maple and oak, the fat giving the whole drink a weight and a coating texture that no ingredient in the glass explains.

Bonded Applejack / Apple Brandy

Newark

Baked apple and vermouth sweetness ambushed by menthol and bitter herbs from the Fernet, with maraschino's cherry-pit funk sitting between them.

Preakness
Rye Whiskey

Preakness

Rye pepper and dried fruit up front, then honey, saffron and a dozen herbs from the Bénédictine filling in every gap the vermouth left open.
