Add mint leaves to a cocktail shaker and gently muddle to release the oils without tearing the leaves.
Add gin, fresh lemon juice, and simple syrup.
Fill the shaker with ice and shake vigorously for 10–12 seconds.
Double-strain through a fine mesh strainer into a chilled cocktail glass to remove all mint debris.
Garnish with a fresh mint sprig.
Muddle mint gently - just enough pressure to bruise the leaves and release their aromatic oils. Over-muddling tears the leaves and releases bitter chlorophyll, which will muddy the drink's bright, clean character.
