Add 8–10 fresh mint leaves and 15ml simple syrup to an old-fashioned glass. Gently muddle to release the mint oils without tearing the leaves.
Add 60ml gin and fill the glass with one large ice cube.
Pour 45ml chilled soda water over the top and stir briefly to integrate.
Garnish with a fresh mint sprig, an orange half-wheel, and a brandied cherry. Serve immediately.
Muddling mint gently is essential - pressing too hard shreds the leaves and releases bitter chlorophyll. A light press to bruise rather than macerate keeps the drink bright and aromatic.
