Fill a highball glass with ice cubes.
Add 60ml gin directly into the glass.
Squeeze in 22ml fresh lime juice.
Top with 120ml soda water.
Stir briefly to combine.
Garnish with a lime wedge on the rim.
The Gin Rickey was born in 1880s Washington D.C., named after Democratic lobbyist Colonel Joe Rickey - the original was made with bourbon, but gin became the definitive version and was so popular it was declared D.C.'s official cocktail in 2011. Unlike a gimlet or Tom Collins, the Rickey uses no sugar, making it one of the most genuinely dry and refreshing highballs in the classic canon.
