Honeysuckle Daiquiri

Using a rich honey syrup (3:1 honey to water by weight) rather than a standard 1:1 simple syrup preserves the aromatic complexity of the honey without watering down its character - a thinner syrup will taste flat by comparison.

Ingredients
Havana Club Añejo 3 Años Cuban Rum60 ml
Lemon juice (freshly squeezed)20 ml
Orange juice (freshly squeezed)15 ml
Honey syrup (3 parts honey to 1 part water by weight)20 ml
Mint leaf
Honeysuckle flower (optional)
Ice cubes
Glassware
Coupe Glass
Chilled.
Method

    Add rum, lemon juice, orange juice, and honey syrup into a cocktail shaker.

    Fill the shaker with ice cubes.

    Shake hard for 10–12 seconds until well chilled.

    Fine strain into a chilled coupe glass.

  5. 5

    Garnish with a mint leaf floated on the surface of the cocktail, or peg a honeysuckle flower to the rim if available.
