Pre-chill an Old-fashioned glass and fill with ice.
Add honey syrup, lime juice, and rum to a shaker.
Add ice and shake vigorously for 10–12 seconds until well chilled.
Strain into the ice-filled glass.
Garnish with a lime wedge on the rim and serve immediately.
Traditionally, the Canchànchara was made with raw honey dissolved directly in lime juice rather than pre-made honey syrup - using a 1:1 honey-to-water syrup is the modern shortcut, but warming raw honey with a splash of hot water and muddling it in the glass first gives a more authentic, rustic character.
