Fill a Collins glass with fresh ice and set aside.
Combine the dark rum, orgeat syrup, orange juice, and pineapple juice in a cocktail shaker filled with ice.
Shake vigorously for 10–12 seconds until well chilled.
Strain into the prepared Collins glass over fresh ice.
Float 2 dashes of Angostura bitters on top by gently shaking them over the surface - do not stir.
Garnish with a cocktail cherry and a wedge or slice of fresh pineapple. Serve immediately.
The classic planter's rhyme - one of sour, two of sweet, three of strong, four of weak - is the original formula behind this drink, making it one of the earliest documented cocktail ratios. For added depth and authenticity, swap a portion of the dark rum for an overproof Jamaican rum such as Wray & Nephew.
