From the Bartender

Hemingway reportedly suffered from diabetes and disliked sweet cocktails, so this drink was designed with minimal sugar - maraschino provides just enough sweetness without syrup. For maximum authenticity, use a high-quality Cuban-style white rum such as Havana Club 3 Año.

Casa Blanca
Light rum

Casa Blanca

Bright and citrusy with tangy lime cutting through the clean sweetness of white rum, triple sec lending a sunlit orange note, and maraschino adding a delicate floral depth and cherry-kissed finish. Crisp, refreshing, and elegantly balanced between tart and sweet.

Frozen Daiquiri

Frosty and citrus-forward, with tart fresh lime and clean white rum melding into a refreshingly icy sweetness. The finish is crisp and bright, with a smooth slushy texture that coats the palate like a tropical snow cone.

Gimlet
Gin

Gimlet

A bright, citrusy classic where tart fresh lime cuts cleanly through botanical gin, with just enough sweetness to round the edges and a crisp, refreshing finish laced with juniper and herbal notes.

Caipirissima
White Rum

Caipirissima

Bright and bracingly tart with fresh lime oils and raw cane sweetness muddled into every sip, the clean softness of white rum delivering a crisper, more approachable finish than its cachaça cousin. Crushed ice keeps it ice-cold and gently diluted - citrusy, refreshing, and dangerously easy to drink.
