Add 60ml white rum, 30ml fresh lime juice, 10ml simple syrup, and 8–10 fresh mint leaves to a blender.
Add approximately 240ml of crushed ice.
Blend on low speed for 10–15 seconds until smooth but still thick and frosty.
Pour into a chilled hurricane or poco grande glass.
Garnish with a fresh mint sprig and serve immediately.
When blending frozen cocktails with fresh mint, blend on the lowest setting for the shortest time possible - over-blending oxidises the mint and turns it bitter and grey. For the cleanest green colour and brightest flavour, use only the leaves and discard the stems.
