Frozen Mint Daiquiri

When blending frozen cocktails with fresh mint, blend on the lowest setting for the shortest time possible - over-blending oxidises the mint and turns it bitter and grey.

Ingredients
White Rum60 ml
Fresh Lime Juice30 ml
Simple Syrup10 ml
Fresh Mint Leaves10
Mint Sprig
Glassware
Hurricane glass
Chilled.
Method

    Add 60ml white rum, 30ml fresh lime juice, 10ml simple syrup, and 8–10 fresh mint leaves to a blender.

    Add approximately 240ml of crushed ice.

    Blend on low speed for 10–15 seconds until smooth but still thick and frosty.

    Pour into a chilled hurricane or poco grande glass.

  5. 5

    Garnish with a fresh mint sprig and serve immediately.
