From the Bartender

Created by Stephen Cole at The Violet Hour in Chicago in the late 2000s. The six dashes of orange bitters look like a typo and are not — they are what stops the Cynar from becoming heavy.

Caraway and dill from the aquavit, saline almond from the fino, and Cynar's earthy bitterness underneath — savoury, dry and completely unlike anything else.

Little Italy

Rye pepper and vermouth's dark fruit, then Cynar's distinctive vegetal bitterness arriving underneath, adding a savoury depth a Manhattan never has.

The familiar Campari-and-juniper bitterness, then a long roasted tail that was not there before, with the vermouth's sweetness stretched thinner across it.

Menthol and bitter bark arriving well before the whiskey does, then bourbon vanilla underneath and a long, cooling, almost medicinal finish.
