From the Bartender

Created by Robert Hess in 2002 as a deliberate Negroni analogue using three entirely different bottles. It is the best argument in existence for keeping a bottle of aquavit behind the bar, and it works particularly well before a meal of cured fish.

Cocktails like this one

Bitter Giuseppe
Cynar

Bitter Giuseppe

Deeply vegetal and bittersweet, the lemon cutting a bright channel through the middle and six dashes of orange bitters lifting the nose well above the weight of the drink.

Coffee Negroni
London Dry Gin

Coffee Negroni

The familiar Campari-and-juniper bitterness, then a long roasted tail that was not there before, with the vermouth's sweetness stretched thinner across it.

Little Italy
Rye Whiskey

Little Italy

Rye pepper and vermouth's dark fruit, then Cynar's distinctive vegetal bitterness arriving underneath, adding a savoury depth a Manhattan never has.

Rabo-de-Galo
Cachaça

Rabo-de-Galo

A bittersweet convergence of grassy, vegetal cachaça with the herbal artichoke depth of Cynar and the rich, spiced warmth of red vermouth. The finish is long, dry, and pleasantly bitter with lingering botanical complexity.
