From the Bartender

The canonical Aperol Spritz ratio is 3:2:1 - Prosecco, Aperol, soda water - always build Prosecco first to preserve carbonation and avoid muddying the bitter-sweet balance. Aperol's official recommendation is to add Prosecco before Aperol, which keeps the bubbles lively and the color vivid.
