Fill a cocktail shaker with ice.
Add coconut rum, amaretto, and orange juice.
Shake vigorously for 10–12 seconds until well chilled.
Fill a highball glass with fresh ice and strain the mixture over it.
Slowly pour grenadine over the back of a bar spoon so it sinks to the bottom, creating a layered sunset effect.
Garnish with a pineapple wedge and a fresh strawberry on the rim. Serve immediately.
Pour the grenadine last and over the back of a bar spoon to slow its descent - this keeps the layers distinct and delivers the signature sunset effect right up until the first stir.
