From the Bartender

Named for the Baltimore horse race and dating to the 1930s. Bénédictine is doing the same job here that it does in a Vieux Carré or a Monte Carlo — at 7.5ml it is seasoning, and at 15ml it takes the drink over. Start low.

Waldorf Cocktail
Rye Whiskey

Waldorf Cocktail

Rye spice and vermouth sweetness in familiar proportion, then a cool anise wash across the top that keeps returning after each swallow.

Manhattan
Rye Whiskey

Manhattan

A sophisticated and spirit-forward cocktail delivering spicy, oak-driven rye whiskey lifted by sweet herbal vermouth and deep aromatic bitters, finishing warm, complex, and impeccably dry.

Liberal
Rye Whiskey

Liberal

Bitter orange and gentian threading through the rye and vermouth, drier and more savoury than a Manhattan and considerably longer on the finish.

Brooklyn
Rye Whiskey

Brooklyn

Spirit-forward and dry, with a spicy rye backbone softened by herbal dry vermouth and a delicate almond-cherry sweetness from Maraschino, while Angostura bitters weave in warming spice and aromatic depth. The finish is long, smooth, and distinctly pre-Prohibition in its elegant complexity.
