Limeade

For the best flavour, always use freshly squeezed lime juice - bottled juice lacks the volatile aromatics that make this drink sing.

Ingredients
Lime juice30 ml
Simple syrup20 ml
Soda water150 ml
Lime peel
Glassware
Highball glass
Chilled.
Method

    Add 30ml fresh lime juice and 20ml simple syrup to a highball glass.

    Stir well until the syrup is fully incorporated.

    Fill the glass with ice.

    Top with 150ml cold soda water and stir gently to combine.

    Express a lime peel over the glass to release its oils, then drop it in as garnish.

    Serve immediately.
