Add 30ml fresh lime juice and 20ml simple syrup to a highball glass.
Stir well until the syrup is fully incorporated.
Fill the glass with ice.
Top with 150ml cold soda water and stir gently to combine.
Express a lime peel over the glass to release its oils, then drop it in as garnish.
Serve immediately.
For the best flavour, always use freshly squeezed lime juice - bottled juice lacks the volatile aromatics that make this drink sing. Adjust the simple syrup up or down by 5ml to suit the tartness of your limes.
