Add 2–3 fresh fig quarters and 3 sprigs of fresh thyme to a cocktail shaker and muddle firmly until the figs are fully broken down and the thyme is fragrant.
Add 60ml vodka, 15ml honey syrup, and 22ml fresh lemon juice to the shaker.
Fill the shaker with ice and shake vigorously for 10–12 seconds until well chilled.
Fill a highball glass with crushed ice.
Double-strain the cocktail through a fine-mesh strainer over the crushed ice into the glass.
Top with 90ml tonic water and gently stir once to integrate.
Float 2 dashes (4ml) of Angostura bitters on top.
Garnish with a fresh fig slice and a sprig of thyme.
Use ripe, soft figs for maximum juice and flavor when muddling - underripe figs will yield little sweetness. Replacing raw honey with a 2:1 honey syrup (two parts honey to one part warm water) ensures it integrates evenly into the cold shaker without clumping.
