Place a lime wedge (quarter of a lime) into an Old-Fashioned glass.
Add 30ml falernum and 2 dashes Angostura bitters.
Muddle firmly to extract the lime juice and essential oils from the peel.
Add 30ml aged Barbados rum.
Fill the glass with ice and stir briefly to combine and chill.
Slowly pour 30ml blackstrap rum over the back of a barspoon to float it on top of the drink.
Serve with a straw to allow the drinker to mix at will.
The float is everything - pour the blackstrap over a barspoon slowly so it sits visually distinct on top, mimicking the 'oil' in the drink's evocative name. Plantation Barbados 5 Year or Doorly's XO are ideal choices for the base aged rum, providing enough oak and sweetness to anchor the blackstrap without competing with it.
