Combine the vodka, pineapple juice and cream of coconut in a shaker.
Add ice and shake hard for 12 seconds until thoroughly emulsified and frothy.
Strain into a hurricane glass filled with crushed ice.
Alternatively, blend with a cup of crushed ice for a frozen serve.
Garnish with a pineapple wedge and a cocktail cherry.
