Bijou

The Bijou was popularized by Harry Johnson in his 1900 Bartenders' Manual, with each of the three main spirits said to represent a gemstone - diamond for gin, ruby for sweet vermouth, and emerald for green Chartreuse.

Ingredients
Gin30 ml
Green Chartreuse30 ml
Sweet Vermouth30 ml
Orange Bitters2 dashes
Lemon Twist
Glassware
Cocktail glass
Chilled.
Method

    Combine 30ml gin, 30ml green Chartreuse, 30ml sweet vermouth, and 2 dashes orange bitters in a mixing glass.

    Add ice and stir for 25–30 seconds until well chilled and properly diluted.

    Strain into a chilled cocktail glass.

  4. 4

    Garnish with a lemon twist.
