A gilded classic from the 1890s, the Bijou earns its name - French for 'jewel' - by combining equal parts gin, sweet vermouth, and green Chartreuse into one of the most layered and sophisticated stirred cocktails ever conceived.

The Bijou was popularized by Harry Johnson in his 1900 Bartenders' Manual, with each of the three main spirits said to represent a gemstone - diamond for gin, ruby for sweet vermouth, and emerald for green Chartreuse. Keeping the equal-parts ratio is essential; adjusting even slightly toward more Chartreuse or vermouth will dramatically shift the drink's character.
