From the Bartender

Associated with the Army and Navy Club in Washington, D.C. and popularised by David Embury's 1948 Fine Art of Mixing Drinks, though Embury himself was rude about it. The orgeat is doing all the work — a thin, artificial one will flatten the drink completely.

Fine and Dandy

Bright orange-peel sweetness over a firm juniper spine, lemon doing the cutting, and a whisper of clove and bark from the single dash of bitters.

Maiden's Prayer
London Dry Gin

Maiden's Prayer

Double-citrus and unapologetic about it — orange sweetness carried by the liqueur, lemon keeping it dry, botanicals surfacing late.

Cloister
London Dry Gin

Cloister

Honey and saffron-like herbs from the Chartreuse riding over pithy grapefruit, with the gin's juniper providing structure and a long, warming herbal finish.

Aviation

Delicately floral and citrusy with the perfumed essence of violette dancing above bright lemon tartness, this elegant cocktail offers a subtly sweet, botanical complexity that finishes dry and refreshingly light with hints of cherry almond from the maraschino.
