Run a lime wedge around the rim of a highball glass and dip in salt to coat. Fill the glass with fresh ice and set aside.
Add 50ml tequila blanco, 30ml Campari, 30ml fresh lime juice, 15ml orange juice, and 15ml rosemary syrup to a cocktail shaker.
Fill the shaker with ice and shake vigorously for 10–12 seconds until well chilled.
Strain into the prepared ice-filled highball glass.
Garnish with a fresh rosemary sprig and serve immediately.
Cutting the rosemary syrup to 15ml and the orange juice to 15ml prevents the drink from becoming too sweet or dilute - the Campari provides plenty of body and bittersweet orange character to fill the gap. For added winter warmth, try a reposado tequila in place of blanco.
