Method

    Prepare a lime peel disc by cutting a round disc from the side of the fruit, ensuring some flesh backs the peel. Pour rhum and sugar cane syrup into an Old-fashioned glass. Squeeze the lime disc between your finger and thumb to express oils and a little juice, then drop it into the cocktail. Stir and consider adding one or two large ice cubes or a small chunk of block ice, depending on preference and glass size.
