Pour lemon juice and simple syrup into a highball glass.

Place a bunch of mint (about 12 leaves) in one hand and clap it with your other hand to release the aromas. Then place the leaves in the glass.

Gently muddle the mint leaves. They should not be muddled too hard or crushed, as the drink can easily become bitter.

Add rum, pomegranate juice, and pomegranate seeds.

Fill a little more than half the glass with crushed ice and stir.

Add sparkling wine and fill the rest of the glass with ice.

Insert straws and garnish with a mint sprig and a lemon wedge.
For optimal flavor, gently muddle mint leaves to avoid bitterness. Simple syrup can be prepared by dissolving equal parts sugar in water (1:1 ratio).
