Add Blackstrap rum, Campari, pineapple juice, lime juice, and demerara syrup to a cocktail shaker.
Fill the shaker with ice.
Shake vigorously for 10–12 seconds until well chilled.
Strain into a rocks glass filled with fresh ice.
Garnish with a pineapple wedge on the rim.
Blackstrap rum is essential here - its intense molasses depth is one of the few spirits robust enough to hold its own against Campari's bitterness. Using a lighter dark rum will produce a noticeably thinner, less characterful drink.
