Horse's Neck

The drink's name comes from the dramatic long lemon spiral that resembles a horse's neck; take the time to cut a single continuous peel from tip to base of the lemon for maximum visual impact and aromatic effect.

Ingredients
Cognac40 ml
Ginger Ale120 ml
Angostura Bitters2 dashes
Lemon Rind Spiral
Ice Cubes
Glassware
highball glass
Chilled.
Method

    Peel a long continuous spiral of lemon rind and drape it inside a chilled highball glass so it curls around the interior with one end hooked over the rim.

    Fill the glass with ice cubes.

    Pour 40ml of Cognac over the ice.

    Gently pour 120ml of ginger ale down the side of the glass to preserve carbonation.

    Add 2 dashes of Angostura Bitters.

    Stir briefly and gently to combine.
