Fill a highball glass generously with ice cubes.
Pour 50ml of gin over the ice.
Top with 150ml of chilled tonic water, pouring slowly down the side of the glass to preserve carbonation.
Squeeze a lime wedge over the drink, then drop it in or place it on the rim as a garnish.
Give one gentle stir to combine and serve immediately.
The Gin & Tonic was popularised by British officers in colonial India who mixed quinine tonic - taken to ward off malaria - with gin to make it more palatable. For the best result, use premium tonic water and a balloon or copa glass packed with ice to keep the drink colder longer and showcase the gin's aromatics.
