From the Bartender

A Dirty Martini is traditionally stirred, not shaken - stirring preserves the silky, cohesive texture of the drink and avoids the aeration and dilution that shaking introduces. For a properly 'dirty' ratio, 30ml of brine is considered bold; scale back to 15ml for a subtler, 'slightly dirty' version.
